Pocketwatch Chardonnay is a terrific example of modern Australian chardonnay, created blending a number of parcels of grapes from the Central Ranges of NSW. Fruit and texture are the vital components, with oak playing a supporting role.

Chardonnay is a perfect wine to pair with fresh white fish or fresh shellfish (oysters with a splash of lemon juice are a big tick), and grilled prawns with a fresh citrus sauce will also be a winner too. Vietnamese-style chicken salad is also a great pairing if you're feeling something more substantial too.
